  • In a blender, combine eggs, coconut milk, coconut sugar, oat flour, vanilla, and salt until smooth.
  • Pour batter over blueberries.
  • Bake for 45 minutes, until set in the center with a slight jiggle.
  • Rest fully. Cool at least 20–30 minutes before slicing.
