Instructions
Preheat oven to 375°F. Grease a round casserole dish or 10-inch skillet with coconut oil.
Spread blueberries evenly in the dish. (If using frozen berries, toss them in oat flour to absorb any excess moisture.)
In a blender, combine eggs, coconut milk, coconut sugar, oat flour, vanilla, and salt until smooth.
Pour batter over blueberries.
Bake for 45 minutes, until set in the center with a slight jiggle.
Rest fully. Cool at least 20–30 minutes before slicing.
