Why This Peach Baked Oatmeal is Different

Most baked oatmeal recipes focus on convenience.

This one focuses on connection and learning.

  • Uses fresh peaches to create a simple homemade jam
  • Naturally sweetened with pure maple syrup instead of relying on brown sugar
  • Made with a flax egg (or chia egg) instead of egg whites
  • Uses rolled oats (old-fashioned oats) for the best texture
  • Designed as a make-ahead breakfast and meal prep option
  • A great way to introduce kids to cooking with whole grains and fresh fruit

This is more than a healthy breakfast—it’s a life skill.

Ingredients You’ll Need

baked oatmeal ingredients

For the Peach Jam:

  • 2 cups fresh peaches, diced (use ripe peaches or juicy summer peaches)
  • 1–2 tablespoons maple syrup
  • Splash of lemon juice

For the Baked Oatmeal:

  • 1 tablespoon flaxmeal (for a flax egg)
  • 1/3 cup almond milk (or oat milk, soy milk, coconut milk, or dairy milk)
  • 1 tablespoon almond butter
  • 2–3 teaspoons maple syrup
  • 1/2 teaspoon cinnamon
  • 1 teaspoon vanilla extract
  • 1 slice gluten-free bread, cubed
  • 1/4 cup rolled oats
  • 2 tablespoons peach jam
  • 1 tablespoon sliced almonds

Optional swaps:

Step 1: Make the Peach Jam

In a medium bowl or saucepan, combine diced peaches, maple syrup, and lemon juice.

Cook over medium heat until the peaches soften and break down into a thick, jam-like texture.

This usually takes about 8–10 minutes.

Let the jam cool to room temperature before using.

This is a great way to show kids how fresh fruit transforms into something new—and it’s one of the best ways to use peaches during peach season.

Step 2: Make the Baked Oatmeal

Preheat your oven to 375°F and prepare a small baking dish or ramekins with cooking spray or coconut oil.

In a large bowl, combine flaxmeal and almond milk to create a flax egg. Let sit for 3–4 minutes until thickened.

Add almond butter, maple syrup, cinnamon, and vanilla extract to the wet mixture. Stir until smooth.

In a separate bowl (optional), combine your dry ingredients: rolled oats and any additional spices.

Add the oats to the wet ingredients and mix well.

Fold in half of the peach jam and the bread cubes.

Divide into a prepared baking dish or individual portions.

Top with remaining jam, a drizzle of almond butter, and sliced almonds. Add a few peach slices for a beautiful finish.

Bake for 20–25 minutes, until the top is golden brown and set.
