- 4 c Watermelon cut in cubes
- ⅓ c Red onion sliced thin
- 2 T Mint fresh, chopped
- 1 Spring Mix 5oz package
- ¼ c Sliced almonds
- 8 oz Rotisserie chicken optional
Dressing:
- 2 T Olive oil
- 1 t Lemon peel grated
- 2 T Lemon juice freshly squeezed
- ½ t Salt
- ¼ t Pepper
Instructions
- To cut the watermelon, please make sure an adult is present. Watermelons can be difficult to cut because they are large and round, so they roll. It is important to first wash the outside of the watermelon. Start by cutting it in half, then place the flat cut side down. Continue to cut in half, then in half, again, until you have a small enough piece to work with. You will then cut it from the rind, then cut into small squares (cubes).
