Ingredients
1small to medium sweet onion
½bunch cilantro
1can petite diced tomatoes
1can Rotel tomatoes with green chilies
2garlic cloves
1tablespooncumin
1teaspoonsalt
½teaspoonblack pepper
Instructions
Roughly chop the onion and cilantro for easier blending.
Add all ingredients to a food processor.
Pulse until you reach your desired consistency (smooth or chunky).
Taste and adjust seasoning if needed.

Notes
For a spicier salsa, use hot Rotel or add a fresh jalapeño.
